
Rib Steak: Cowboy Style

Ingredients:
- 2 (12 to 16 oz) bone-in rib steaks, about 1 to 1½ inches thick
- 2 tablespoons olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 2 tablespoons unsalted butter
- 3 cloves garlic, smashed
- Fresh rosemary or thyme sprigs (optional, for basting)
Instructions:

Bring steaks to room temperature:
Remove the rib steaks from the refrigerator about 30 minutes before cooking. Pat dry with paper towels. -
Prepare the seasoning:
In a small bowl, mix together salt, black pepper, smoked paprika, garlic powder, onion powder, and dried thyme. -
Season the steaks:
Rub olive oil all over the steaks, then generously season both sides with the spice mixture. -
Preheat grill or skillet:
Heat a grill to high or a cast-iron skillet over medium-high heat until very hot. -
Cook the steaks:
Place the steaks on the grill or skillet. Cook for about 4-5 minutes per side for medium-rare, or until desired doneness. Avoid moving the steaks to allow a good crust to form. -
Baste with butter and herbs:
In the last 2 minutes of cooking, add butter, smashed garlic, and herb sprigs to the skillet (if using). Spoon the melted butter over the steaks repeatedly for rich flavor. -
Rest the steaks:
Remove the steaks from heat and let them rest for 5-10 minutes tented loosely with foil. -
Serve:
Slice against the grain if desired, and serve with your favorite sides like grilled vegetables or baked potatoes.
Tips & Notes:
- For an authentic cowboy-style touch, serve with a smoky BBQ sauce or chimichurri.
- Letting the steaks rest after cooking ensures juicy, tender meat.
- Use a meat thermometer to get perfect doneness (130°F/54°C for medium-rare).
