Share
Ingredients:
- 4 goat rib chops (about 1 inch thick)
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 1 teaspoon lemon zest
- Salt and freshly ground black pepper, to taste
- Lemon wedges, for serving
Instructions:
-
Prepare the marinade:
In a small bowl, combine olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and pepper. -
Marinate the chops:
Rub the herb mixture all over the goat rib chops. Place the chops in a shallow dish or zip-top bag and marinate for at least 1 hour, preferably 3-4 hours, in the refrigerator. -
Preheat the grill:
Heat your grill to medium-high heat. -
Grill the chops:
Remove the chops from the marinade and let excess drip off. Grill the chops for about 4-5 minutes per side for medium-rare to medium doneness. Adjust time based on thickness. -
Rest the chops:
Remove from the grill and let the chops rest for 5 minutes to allow juices to redistribute. -
Serve:
Serve the goat rib chops with lemon wedges on the side for squeezing.
Tips & Notes:
- Goat meat has a unique flavor that pairs beautifully with fresh herbs and lemon.
- Avoid overcooking to keep chops tender and juicy.
- Serve with grilled vegetables or a fresh salad.
