Goat Rib Chop: Herb Grilled

Ingredients:

  • 4 goat rib chops (about 1 inch thick)
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 teaspoon lemon zest
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges, for serving
Instructions:
  1. Prepare the marinade:
    In a small bowl, combine olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and pepper.
  2. Marinate the chops:
    Rub the herb mixture all over the goat rib chops. Place the chops in a shallow dish or zip-top bag and marinate for at least 1 hour, preferably 3-4 hours, in the refrigerator.
  3. Preheat the grill:
    Heat your grill to medium-high heat.
  4. Grill the chops:
    Remove the chops from the marinade and let excess drip off. Grill the chops for about 4-5 minutes per side for medium-rare to medium doneness. Adjust time based on thickness.
  5. Rest the chops:
    Remove from the grill and let the chops rest for 5 minutes to allow juices to redistribute.
  6. Serve:
    Serve the goat rib chops with lemon wedges on the side for squeezing.
