
Chuck Arm Roast: Rustic Garlic & Herb Roast

Ingredients:
- 2.5 lb chuck arm pot roast
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 onion, sliced
- 5 cloves garlic, smashed
- 1 tsp dried rosemary
- 2 cups beef stock
Instructions:
- Season and Sear: Preheat your oven to 300°F. Pat the chuck arm roast dry and season it generously with salt and pepper. In a Dutch oven or large oven-safe pot, heat olive oil over medium heat. Sear the roast for about 3–4 minutes per side until a rich brown crust forms.
- Sauté the Aromatics: Remove the roast and set aside. In the same pot, add the sliced onion and smashed garlic cloves. Cook for 3–4 minutes, stirring occasionally, until the onions begin to soften and the garlic becomes fragrant.
- Add Herbs and Liquid: Sprinkle the rosemary into the pot and return the roast to the pan. Pour in the beef stock until it comes about halfway up the sides of the roast.
- Slow Cook: Cover the pot with a lid and transfer it to the oven. Roast for 3 hours, basting once or twice during the cook time with the juices from the pan to keep the meat moist and flavorful.
- Rest and Serve: Once the roast is fork-tender, remove it from the oven. Let it rest for 10 minutes before slicing. Serve with the pan juices spooned over the meat or alongside mashed potatoes, roasted vegetables, or crusty bread for a rustic, comforting meal.
