
Beef Heart: Grilled Skewers

Ingredients:
- 1 beef heart (about 2 pounds), trimmed and cut into 1-inch cubes
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 2 tablespoons fresh lime juice
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and freshly ground black pepper, to taste
- Wooden or metal skewers
- Fresh cilantro or parsley, chopped (for garnish)
Instructions:

Prepare the beef heart:
Trim off any connective tissue and fat from the beef heart. Cut the meat into 1-inch cubes, ensuring pieces are uniform for even cooking. -
Make the marinade:
In a bowl, combine olive oil, minced garlic, lime juice, cumin, smoked paprika, chili powder, salt, and pepper. Whisk to blend well. -
Marinate the beef:
Add the beef heart cubes to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight, to allow flavors to penetrate. -
Prepare skewers:
If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning. -
Preheat grill:
Heat the grill to medium-high. -
Thread the beef:
Thread the marinated beef heart cubes onto the skewers, leaving a little space between pieces for even heat circulation. -
Grill the skewers:
Place skewers on the grill and cook for about 3-4 minutes per side, turning once, until the beef heart is cooked through but still tender. Avoid overcooking to keep meat juicy. -
Rest and garnish:
Remove from grill and let rest for a few minutes. Garnish with chopped cilantro or parsley. -
Serve:
Serve the skewers hot with rice, grilled vegetables, or a fresh salad.
