Beef Heart: Grilled Skewers

Ingredients:

  • 1 beef heart (about 2 pounds), trimmed and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 2 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and freshly ground black pepper, to taste
  • Wooden or metal skewers
  • Fresh cilantro or parsley, chopped (for garnish)
Instructions:
  1. Prepare the beef heart:
    Trim off any connective tissue and fat from the beef heart. Cut the meat into 1-inch cubes, ensuring pieces are uniform for even cooking.
  2. Make the marinade:
    In a bowl, combine olive oil, minced garlic, lime juice, cumin, smoked paprika, chili powder, salt, and pepper. Whisk to blend well.
  3. Marinate the beef:
    Add the beef heart cubes to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight, to allow flavors to penetrate.
  4. Prepare skewers:
    If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
  5. Preheat grill:
    Heat the grill to medium-high.
  6. Thread the beef:
    Thread the marinated beef heart cubes onto the skewers, leaving a little space between pieces for even heat circulation.
  7. Grill the skewers:
    Place skewers on the grill and cook for about 3-4 minutes per side, turning once, until the beef heart is cooked through but still tender. Avoid overcooking to keep meat juicy.
  8. Rest and garnish:
    Remove from grill and let rest for a few minutes. Garnish with chopped cilantro or parsley.
  9. Serve:
    Serve the skewers hot with rice, grilled vegetables, or a fresh salad.
